About

Welcome to Evergreen Plate — a space where wholesome food, real ingredients, and everyday wellness come together.

I’m a forty-something mom of two, a full-time teacher, and someone who truly believes that food has the power to change how we feel from the inside out. For the past 13 years, I’ve eaten a vegetarian diet, however, I have not always chosen minimally processed Whole Foods. My mission is now to eat a cleaner diet and help others along the way.

My passion for healthy eating became deeply personal after losing my mom to complications related to Type 2 diabetes. Watching someone I loved struggle with a disease so closely connected to nutrition changed the way I viewed food forever. It inspired me to make it my mission to help others discover that eating well doesn’t have to be complicated, restrictive, or expensive — it can be comforting, beautiful, and life-giving.

Research continues to show how powerful whole foods can be for our health. Diets rich in fruits, vegetables, legumes, nuts, seeds, and whole grains have been linked to lower risks of heart disease, Type 2 diabetes, high blood pressure, and certain cancers. Studies have also found that people who eat more whole, minimally processed foods tend to have better energy levels, improved digestion, and overall better long-term health outcomes.

Here at Evergreen Plate, you’ll find realistic vegetarian recipes, nourishing meal ideas, healthy comfort food, and simple ways to make eating well feel joyful and sustainable for busy families. Whether you’re beginning your wellness journey or simply looking for inspiration to add more real food to your life, I’m so glad you’re here.

Because healthy eating isn’t about perfection — it’s about creating a life that feels vibrant, balanced, and well nourished, one plate at a time.
